Quick and easy egg salad combines grated hard cooked eggs, potatoes, and onion in a mayonnaise dressing.
Ingredients -
1 Potato, peeled and boiled until tender
8 to 10 Hard-Cooked Eggs, shells removed
1 large Onion
2 tablespoons Mayonnaise or Salad Dressing
Salt and Pepper, to taste
Dill Flakes
Paprika
Preparation:
1. Grate potato, egg and onion on large side of grater.
2. Stir in mayonnaise, salt and pepper.
3. Serve over tomato slices. Garnish with olive slices. Sprinkle salad with paprika and dill flakes.
4. Serve with rye bread or crackers.

Depending on the size of the potato, expect a cooking time of approximately 15-20 minutes when boiling. The potato will continue to cook after removing from boiling water. Allow cooling time.
