Egg Salad With Bacon And Horseradish

Perfect egg salad for spreading on crackers or garlic toast as an appetizer or for use as a sandwich spread.
Ingredients -
12 Hard-Cooked Eggs, peeled and chopped
6 stalks Celery, chopped
5 Scallions, sliced
12 ounces Bacon, cut into 1 inch squares, cooked crisp and drained
2 tablespoons Caraway Seeds
3 to 4 tablespoons Prepared White Horseradish, drained
1 cup Mayonnaise
Salt and Freshly Ground Black Pepper, to taste
1/2 cup chopped Parsley
 
Preparation:

1. In a medium bowl, gently toss hard-cooked eggs, celery, scallions, bacon, and caraway seeds.

2. In a small bowl mix horseradish and mayonnaise. Fold horseradish mixture with egg salad.

3. Season with salt and pepper. Garnish with parsley.
