Egg Salad Triangles

Diced hard cooked eggs mixed with minced green onion, mayonnaise, salt and pepper. Egg salad is spread on whole wheat triangles. Perfect brunch, lunch, or appetizer.
Ingredients -
2 eggs, Hard-Cooked
2 small Green Onions
3 tablespoons Mayonnaise
Salt and Pepper
8 slices Whole Wheat Bread
 
Preparation:

1. Finely dice hard-cooked eggs.

2. Mince green onions.

3. Add egg and green onion to small bowl.

4. Add mayonnaise, salt and pepper. Stir to combine.

5. Cover and refrigerate at least 1 hour.

6. Remove crusts from whole wheat bread.

7. Spread 4 slices with egg salad. Cover with remaining bread slices. Cut diagonally.

Use your favorite brand or other variety of bread or cracker.

Boiled Eggs
Add a heaping teaspoon of salt to the boiling water to keep shells from cracking during the cooking process.
