Continental Egg Salad

Hard cooked eggs, combined with shredded cheese, mayonnaise, chives, prepared mustard, salt and dill. Egg salad served over tomato slices.
Ingredients -
6 Hard Cooked Eggs, finely chopped
1-1/2 cups shredded Swiss Cheese or Medium Cheddar Cheese
1 cup Mayonnaise or Salad Dressing
2 tablespoons chopped Fresh Chives
1 teaspoon Prepared Mustard
1/2 teaspoon Salt
4-5 medium Tomatoes, chilled and sliced ½” thick
Dill Weed (optional)
 
Preparation:

1. In large bowl, combine hard cooked eggs, cheese, mayonnaise, chives, prepared mustard, salt and dill. Stir gently.

2. Cover and refrigerate 1-2 hours.

3. To serve:
Spoon Continental egg salad over tomato slices.

Chives
Substitute 2 teaspoons dried chives for the fresh chives if necessary.

Hard Cooked Eggs
Fresh eggs are difficult to peel after hard cooking. Buy eggs a week prior to the time you will need them.
